Shredded Pork (Yu xiang rou si)with garlic sauce is a famous dish in Chengdu, Sichuan.It is made with pork loin as the main ingredient, winter bamboo shoots, fungus, etc., and soft-fried with Sichuan's unique fish-flavor seasoning. The taste is very different, and it is highly praised by diners.


List of ingredients: 


Food materials

Lean meat: 150 grams (preferably tenderloin)

Egg :1piece

Black fungus:30g

Bamboo shoots: 50g (you can also use onion instead)


green peppers:30g

Seasoning: salt, cooking wine, water starch, light soy sauce, vinegar, sugar, green onions, ginger, garlic, monosodium glutamate (chicken essence), dried chili (cut into small pieces )

Steps of cooking

1. Soak the fungus half an hour in advance.

2. Cut the tenderloin into shredded pork, add salt, cooking wine, egg

white, water starch, stir in one direction for 10 seconds for 10 seconds, and marinate for 5-10 minutes. Shred the ingredients: fungus, bamboo

shoots, green peppers and carrots.

3. "Fish flavor" sauce: soy sauce, vinegar, sugar, cooking wine, chopped green onion, chopped ginger, chopped garlic, monosodium glutamate

(chicken essence), water starch

4. Heat the pot, add a little more oil than usual for cooking, heat up to 60% of the oil, pour in the shredded pork, stir fry until the color

changes, and drain the meat out of the oil;

5. Leave a small amount of base oil in the pot, saute the dried chili,

add fungus, bamboo shoots (or onion), green peppers, and carrots and stir fry for a while, add in the shredded pork and continue to fry, finally the fish flavor sauce. Stir fry on high heat until the sauce turns thick.

Dish out and sprinkle some chopped spring onions.
